Almond, Coconut and Chia Seed No-carb muffins
Ingredients
1 cup almond flour
1/2 cup coconut flour
1/4 cup chia seeds
3 tsp stevia
3 tsp baking powder
650ml egg whites
2 tbsp udos oil
Makes 9 muffins
Place all the muffin cases in a metal muffin tray and pre-heat an oven to 190 degrees
Add all the dry ingredients to an electronic mixer and start adding the egg whites gradually
Mix then pulse until totally smooth
Spoon equal amounts into each muffin case and then bake for 20 minutes
Allow to cool thoroughly on a wire rack
